But what most people don’t realize is that traditional Caesar dressing is not actually the thick, heavy, mayo-based version that you often see today.

The original version is lighter, more emulsified, and built around simple, real ingredients that create bold flavor without needing much at all. It is a dressing where every ingredient has a purpose, and nothing is just filler. It relies on technique as much as ingredients, which is why it tastes so different when it’s made from scratch.

What Makes Caesar Dressing “Authentic”

Traditional Caesar dressing is built around a few simple but powerful ingredients:

  • Egg yolk for creaminess and emulsification

  • Olive oil for richness and body

  • Lemon juice for brightness and acidity

  • Garlic for depth and sharpness

  • Parmesan cheese for saltiness and umami

  • Anchovy (or Worcestershire sauce) for that signature savory backbone

It is simple, but each ingredient plays an important role. Nothing is random, everything is there to build that bold, balanced flavour Caesar dressing is known for.

A Fun Twist: Mexican-Inspired Caesar Dressing

Once you understand the base of a classic Caesar dressing, it becomes really easy to start playing with it.

The foundation stays the same, creamy, tangy, garlicky, and rich with that umami depth. But small adjustments can completely shift the flavour profile in a really interesting way.

One of my favorite variations is a Mexican-inspired Caesar dressing.

It builds on the same classic base, but leans into warmer, slightly smokier flavours that feel a little brighter and bolder. Think hints of lime instead of lemon, a touch of spice, and ingredients that shift it into something that pairs beautifully with tacos, grilled meats, roasted vegetables, or burrito bowls.

It is still Caesar at its core, just with a different direction in flavour.

Authentic Caesar Dressing

Ingredients

  • 1 egg yolk

  • 2 tbsp fresh lemon juice

  • 1–2 tsp Dijon mustard (modern addition, but commonly used)

  • 1–2 cloves garlic, finely minced

  • 2–4 anchovy fillets or 1–2 tsp anchovy paste

  • ½ cup olive oil

  • ¼ cup finely grated Parmesan cheese

  • ¼ tsp black pepper

  • Salt, to taste

These come together to make a rich and authentic Caesar dressing!

Instructions

  1. In a bowl, whisk together:

    • egg yolk

    • lemon juice

    • Dijon mustard

    • garlic

    • anchovy fillets (mashed well) or anchovy paste

  2. Slowly drizzle in olive oil while whisking continuously
    → this is what creates that smooth, creamy emulsion and brings everything together

  3. Stir in Parmesan cheese until fully combined

  4. Season with black pepper and salt to taste

From separate elements into a rich, glossy dressing full of depth and flavour!

Taste and adjust as needed:

  • More lemon for brightness

  • More Parmesan for saltiness

  • A touch more anchovy for depth.

Anchovy Fillets vs Anchovy Paste

Both work and both are completely authentic.

  • Anchovy fillets → more traditional, slightly richer texture when mashed in

  • Anchovy paste → easier, quicker, and blends seamlessly into the dressing

Either way, this is what gives Caesar dressing its signature depth. Not a “fishy” flavour, but a savoury, umami base that makes everything else taste more complete.

If you’re hesitant about anchovy, this is one of those cases where it really does melt into the background and just makes everything taste better overall.

How to Use It

This Caesar dressing works with more than just salad.

Try it with:

  • Classic Caesar salads

  • Grilled chicken salads

  • Roasted vegetables

  • Grain bowls

  • Wraps and sandwiches

It also works really well as a dip for fresh vegetables or even crispy roasted potatoes when you want something a little more flavourful than a standard dip.
