My 17 year old fixed our nachos… and honestly she’s not wrong.

Stuffed = better. Always.

And somehow, no matter how you layer them, it always turns into the same situation - a few perfectly loaded bites, and a whole lot of plain ones.

I was in the grocery store with my 17-year-old, grabbing what we needed for nacho night, when she picked up a bag of scoop chips and casually said she wanted to try stuffing them instead of getting the normal nacho chips.

At the time, it felt like one of those small, random ideas you don’t think much about.

But once we tried it? That was it.

Now it’s the only way we make nachos.

Stuff them.

A mix of sautéed onions and bell peppers with ground meat of choice (beans for a vegetarian/vegan version) and homemade taco seasoning creates a filling that is:

  • Slightly smoky

  • Easy to prep

  • Full of flavor

Cooking the vegetables first brings out natural sweetness and depth, while the seasoning adds warmth and that classic taco taste — all without any processed ingredients.

How to Make Stuffed Nachos

This is one of those recipes that looks impressive but is actually very easy to put together.

Stuffed Nachos Recipe

Ingredients:

  • 1 lb ground meat of choice or 1 can of beans

  • 1 onion, diced

  • 1 bell pepper, diced

  • 1–2 tbsp taco seasoning

  • 2 tbsp of water

  • 1 bag scoop-style tortilla chips

  • 1–2 cups shredded cheese

  • 1–2 jalapeños, sliced

  • 1 tbsp avocado oil

Optional Toppings (for serving)

  • Salsa verde

  • Guacamole  

  • Sour cream

  • Any of your other favorite nacho toppings

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Sauté the vegetables Heat avocado oil in a pan over medium heat. Add diced onion and bell pepper and cook until softened, about 4–5 minutes.

  3. Cook the meat/beans Add ground meat of choice to the pan and cook until almost fully browned. If added beans instead of meat, cook till almost done.

  4. Add seasoning Drain the fat from the meat and stir in taco seasoning and 2 tbsp water. Let simmer until fully cooked and slightly thickened.

  5. Assemble the nachos Line scoop-style tortilla chips in an oven-safe dish. Fill each chip with the meat mixture.

  6. Add toppings Sprinkle shredded cheese over the filled chips and top with sliced jalapeños.

  7. Bake Place in the oven for 8–10 minutes, or until cheese is fully melted.

  8. Serve Serve warm with salsa verde, guacamole, and sour cream.

Nothing complicated here…

Choose your favorite ground meat, or black beans, and vegan cheese for a vegetarian/vegan version.
